As a matter of principle

It is often not easy to prepare high-quality, sustainable food and offer it at attractive prices at the same time. Nevertheless, we try not to compromise on this. It starts with the selection of food—fair and regional production is very important to us, for example. We also do everything ourselves as far as possible, whether it's grinding flour, peeling potatoes, or making purée. Of course, this involves a great deal of effort, but we are happy to accept this. Because only in this way do we have the opportunity to prepare food for you in the way we believe is right—good for people and good for the environment.

Is that necessary?

One aspect of sustainability is therefore also renunciation. This means that we question every step—from purchasing to preparation— : Is this necessary? Can we optimize it? Can it perhaps be obtained from a more sustainable source?

Fairly produced

A very important criterion for our purchasing decisions is that no one should be harmed by our actions. This means that, as far as possible, we only purchase food from countries that have similarly strict rules for labor and environmental protection as in Central Europe. If this cannot be guaranteed, we only purchase organic products here.

Short distances

In addition to quality, regionality plays a major role. For example, our eggs come from the Eifel region, our organic vegetables from Wachtberg, our mineral water from the Bergisches Land region, and our potatoes from the Wiesengut in Hennef (University of Bonn experimental farm) and from Mr. Ellenberg in the Lüneburg Heath.

What else?

We also pay attention to sustainability in the restaurant and kitchen. For example:

  • Energy-efficient, state-of-the-art cooking appliances
  • Production tailored to demand (cook and chill)
  • No ready-made products
  • Economical and efficient dishwashers
  • Hardly any food waste thanks to our weighing system (Federal Award 2019)
  • Careful waste separation
  • Economical use of cleaning agents and materials

Note: In the restaurant, we have a list where you can see exactly which foods we have from organic farming— feel free to ask us. There are products that we exclusively purchase sustainably and also ingredients that come from organic farming, depending on availability.
